White Dragon Fruit Granita

INGREDIENTS

Ripe White Pitahaya – 1 large piece
Fresh or canned lychees – 10–12 pieces
Plant-based milk or water – 1 cup
Ice – 1 cup (or more for a frozen texture)
Honey or agave syrup – 1–2 teaspoons
Lemon juice (optional) – 1 teaspoon
Fresh mint leaves (optional) for garnish

Instructions

1. Prepare the fruit:
– Peel the lychees and remove the pits.
– Peel and cut the white pitahaya into cubes.

2. Blend the granita:
– Place the lychees, pitahaya, plant-based milk or water, honey, and ice in a blender.
– Blend until you achieve a thick, frozen-like texture.
– Add lemon juice if you want a slightly tangy touch to enhance the flavors.

3. Serve:
– Vierte el granité en vasos altos.
– Decora con hojas de menta fresca o cubitos de pitahaya.

Chef’s Tips

– For a more visual effect, serve in clear glasses and add a topping of chia seeds or granola.
– You can also grate a little lemon zest on top for an aromatic and colorful touch.
