Dragon Fruit Pearls with Strawberry Cream and Pistachio Praliné

INGREDIENTS

Pink or white dragon fruit – 1 large piece
Strawberry Greek yogurt – 1 cup
Pistachio praliné – 2 tablespoons
Honey – 1–2 teaspoons
Fresh mint leaves (optional)– To taste
Edible gold leaf – To taste

Instructions

1. Shape the dragon fruit balls (parisienne style):
– Using a melon baller, scoop out dragon fruit balls and place them in a bowl.

2. Assemble the bowl:
– Place the dragon fruit balls around the bowl or mix them with the strawberry Greek yogurt.
– Add the pistachio praliné on top.

3. Sweeten and decorate:
– Drizzle a little honey over the yogurt and fruit.
– Optional: Garnish with fresh mint leaves for color and aroma.

4. Serve:
– Serve immediately to maintain the freshness and creamy texture of the yogurt.
